Puréed Green Soup

Lately all I've been eating is soup, soup and more soup! I simply throw whatever is on hand into a pot, cook it up and puree it. Nothing overcomplicated for this 7 month pregnant mama!  Feel free to use any vegetables your family likes and even some they don't  (since its impossible to determine what's in here anyway!)



Puréed Green Soup

Avocado oil, to sauté veggies
1 onion, chopped
2 stalks celery, peeled and chopped
1 large broccoli stalk
1 large Potato, any variety (or 2 small)
5 cups low sodium veggie stock, water or combination
2 large handfuls baby spinach
Salt and black pepper, to taste 


Saute onions, celery, carrots and potatoes until softened about 10 minutes. Add vegetable stock and water and bring to a boil. Reduce to a simmer, cook until vegetables are completely soft about 20-30 minutes. Add spinach and puree using a blender or immersion blender.
