Spiced Sweet Potato and Quinoa Salad

I doubt I'll be posting any hot food on the blog while it's summertime, so I hope you like cool, refreshing salads! This time of year I like to keep things super simple and fresh!



Spiced Sweet Potato and Quinoa Salad 

1 cup quinoa, cooked

1 can chickpeas, rinsed and drained (or use dried and cooked) 

2 large sweet potatoes, peeled and chopped

6 tbsp olive oil, divided 

2 tbsp lemon juice (1 lemon squeezed)

Handful of parsley leaves, chopped

2 teaspoons cumin, divided

1/4 teaspoon cinnamon

1/2 teaspoon smoked paprika

Salt and pepper, to taste 


Place sweet potatoes on a parchment lined tray with 3 tablespoons oil, 1 teaspoon cumin, salt, cinnamon and paprika. Bake on 400 until soft inside with brown bits, about 45 minutes. Allow to cool. Mix quinoa, chickpeas, sweet potatoes together in a large bowl. Make the dressing from the remaining ingredients and mix gently. Add torn parsley, as desired.
