Pineapple Breakfast Bake

So many people ask me to post sweet breakfasts that are still healthy. If you are one of those coffee and a muffin type people, you'll love this breakfast bake! 


Pineapple Breakfast Bake 1 pineapple, chopped into chunks

1 tbsp vanilla

1 tsp cinnamon

1/4c water 


1 cup almond meal 

1/2 c shredded coconut 

1/2 tbsp vanilla 

1 tbsp cinnamon

1 tbsp maple syrup

1/4c melted coconut oil


Preheat oven to 350. Mix pineapple with water, vanilla and cinnamon. Place on the bottom of a pie plate. To make the topping add almond meal, coconut, vanilla, cinnamon, maple syrup and coconut oil. Mix well and sprinkle over the pineapples. Bake covered 10 minutes and uncovered 10 minutes.
