Parsley Lime Tempeh

2 packages tempeh 

1 cup parsley chopped 

1/4c lime juice 

1/3c olive oil 

2 tbsp maple syrup 

a little water to thin mixture

Dried mint, a sprinkle 

salt, to taste


Preheat oven to 350. Slice tempeh into trangles, or any shape you like. Mix all marinade ingredients and add a little water if needed to thin mixture.  Pour marinade over tempeh. Coat tempeh well. Bake, covered about 20 minutes.
