I'm one of those people who love everything better in pancake form! These pancakes are made from quinoa flakes, which taste very similar to rolled oats. Sometimes I feel like oats is a little heavy for my stomach, so if you have that same issue, or if you just want to change up your oatmeal routine, give quinoa flakes a try!
Quinoa- Flake Blender Pancakes (serves 1)
1/2c quinoa flakes
1/2 c non- dairy milk
1 tbsp chia seeds
1/2 teaspoon turmeric, optional
1/2 teaspoon cinnamon, optional
Process everything in blender and let batter sit 5 minutes, while skillet is warming up. Coat skillet with coconut oil (or use a spray) and cook pancakes, flipping once.
Pro tip: This recipe can be doubled as many times as you want and frozen, and makes a great meal- prepped breakfast option.
