Basic Tofu Scramble

One of my favorite breakfasts, I whip up a batch of this tofu scramble on Sundays and have a delicious savory breakfast for several days.  There are endless possibilities for mix ins so get creative and enjoy! 





Basic Tofu Scramble 

2 cloves garlic

1 bell pepper

handful of parsley or cilantro, chopped

1 package extra firm tofu

1/2 red onion, chopped

salt and black pepper

1 tsp turmeric 

optional veggies: jalapenos, mushrooms


Dry and mash the tofu. Add onions, pepper and garlic to a saute pan with oil. Heat up 5 minutes. Add tofu, spices and a little water and continue to cook about 5-10 minutes, adding more water if pan gets too dry.
