Parsley Pesto

I love basil and I love basil pesto but sometimes I cannot find decent basil. I developed this parsley pesto with the idea that I need dinners on thursday night that are easy and everyone will love! This pesto definitely fit the bill! If someone in your family has a nut allergy, I have a hemp seed pesto on this site that would be perfect for you. 





Parsley Pesto 

1 bunch parsley, cleaned and stems trimmed off

1/4c Marcona almonds

1/4 cup extra virgin olive oil

1/4 tsp salt (or to taste) 

water, to thin, I find about 1/3 cup works, but add slowly, until desired consistency is reached
