Classic Greek Vinaigrette

One of my all time favorite salad dressings, I usually whip this up, along with 2 more dressings and keep them there for the week. The amount of oil you put into this dressing is really up to you- if you are entertaining a crow, you may want to put more whereas if you are someone who is watching their fat intake, you may decide to use less and add some water. Either way, the final result is something fantastic! 


 Classic Greek Vinaigrette

1/2c red wine vinegar

2/3 c extra virgin olive oil

salt and pepper, to taste

2 tsp dried oregano

1 clove garlic, minced

2 tsp dried basil 

1 tsp high quality Dijon Mustard


Blend all ingredients, leaving oil for last. Alternatively you can whisk by hand but I do like how creamy the blended version gets.
