Sometimes you want a rich, creamy dressing - I get it! But there are so many amazing plant based dressings, that you never have to step foot next to a Hellman's Mayo Jar ever again! Here, cashews give the dressing an amazing texture. Note: This dressing thickens up in the fridges so you may need to add more water to thin it out the next day.
Cashew Green Goddess Dressing
Boiling water to cover the cashews
1 garlic clove
2 tbsp lemon juice
1 tsp miso paste
salt and pepper, to taste
1 bunch parsley
extra water, to thin
Pour boiling water over cashews and let soften 30 minutes or more. Then drain water and blend all ingredients until smooth, adding water if necessary to thin.
*Note: When cooking with real ingredients, measurements are never perfect, so taste as you go!
