Sweet Potato and Red Lentil Soup

In case you haven't heard, throwing pea protein into everything is predicted to be one of the biggest wellness trends of 2017. If you are interested in a vegetarian or vegan diet but are worried about your protein, then it is worth investing in a good quality unsweetened, unflavored pea protein powder. This soup packs the perfect protein punch for a post- workout snack once it gets too cold to blend a smoothie! 




Sweet Potato and Red Lentil Soup 


2 carrots, peeled and chopped

1 onion, chopped

2 stalks celery, chopped

2 tbsp organic canola or avocado oil 

1 cup red lentils

1 package unflavored pea protein (Optional)

salt and pepper to taste 

4 1/2c water

1 can Organic sweet potato puree or 1-2 sweet potatoes, pureed (Pumpkin can also be substituted)

1/2 tsp cumin 

1/2 tsp cinnamon 

1 tsp hot chili powder or red pepper flakes for optional heat


Saute carrots, onion, celery and spices in oil.  Add the water, lentils and sweet potato, and bring lentils to a boil. Reduce heat and add unflavored pea protein, making sure to mix completely. Let simmer 15 minutes until the vegetables and lentils are soft and the protein completely disappears. Add extra water to thin out, if desired.
