One of my kitchen secrets is that I use marinades and salad dressings interchangeably. I don't know if this is something a classically trained chef would ever do, but I rather make one batch of marinade and be able to use it for many different dishes. I love this dressing/ marinade with massage kale and other Tex- Mex type flavors.
Jalapeno- Lime Dressing and Marinade
1/2c olive oil
1/4c fresh lime juice
1 jalapeno, deseeded and chopped thin
1 garlic clove, minced
zest of 1 lime
2 scallions, sliced thin
salt and pepper, to taste
sprinkle, red chili flakes
Whisk or blend all ingredients, leave the oil for last.
